Charmoula-Rubbed Mahi-Mahi

Monday doesn’t have to be boring and mundane! Add a little flavor back into your Monday night with Bon Appetits’ Charmoula-Rubbed Mahi-Mahi. Packed with fresh cilantro, garlic and lime, it will quickly become a meal time favorite.

The mahi-mahi’s flavor is complimented by jasmine rice and a glass of gewürztraminer, a dry wine with tangerine and peach undertones.

Ingredients:

1/2 cup finely chopped fresh cilantro

1/4 cup olive oil

1/2 teaspoon ground cumin

1/2 teaspoon paprika, sweet or smoked

1/2 teaspoon kosher salt

Juice of 1 lime

1 small garlic clove, grated

4 6-oz. mahi-mahi fillets

Preparation:

Stir together cilantro, oil, cumin, paprika, salt, lime juice, garlic, and 1 Tbsp. water (alternatively, pulse ingredients in a food processor for a smoother texture and a slightly more intense herbal flavor). Rub mixture onto the mahi-mahi fillets and chill for at least 15 minutes and up to 1 hour.

Preheat oven to 425°. Place marinated fish on a rimmed baking sheet. Roast until fish is just opaque in center, 10–15 minutes.
